Wash and dry all produce. Preheat oven to 200 degrees. Pick @basil{1%oz} leaves from stems; discard stems. Peel and halve @cucumber{1%unit} lengthwise, then thinly slice into half-moons. Thinly slice @fresh mozzarella{8%oz}.

@flatbreads{4%unit}. Pile one flatbread with mozzarella, @prosciutto{4%oz}, and basil leaves. Top with another flatbread. Cut stack in half widthwise. Repeat with remaining flatbreads.

Heat a large drizzle of @olive oil{4%tsp} in a #large pan{} over medium heat. Add panini (assembled sandwiches). Cook until golden brown and cheese has melted, 3-4 minutes per side. Transfer to a #baking sheet{}, and place in #oven{} to keep warm. Repeat with remaining panini, and add more olive oil if necessary.

In a #large bowl{}, toss @grape tomatoes{8%oz}(halve any that are too large), @mixed greens{4%oz}, and cucumber with 4 teaspoons of @balsamic vinegar{2%tbsp} and a large drizzle of olive oil. Season with @salt{} and @black pepper{}.

Serve: Cut the creamy prosciutto panini into triangles, and serve with green salad on the side. Enjoy!
